Spicy Mexican Pork & Bean Cassoulet (1L serves 3-4) (gluten free/nut free/dairy free)
Defrost, then heat on the stove top till hot through (add a dash of water), stir occasionally.
Serve with rice, fresh coriander and a squeeze of lime. Or make your very own loaded nachos. Simply top with the pork cassoulet, sour cream and some fresh guacamole. YUMM!
